THE rich waters around ­Wigtownshire’s coastline are teeming with life, but most of the shellfish caught here is shipped off to UK cities, to Spain or even Asian markets.

It’s a strange phenomenon – one found across the country – that despite this ready bounty at our fingertips, we seem to prefer beef and chicken to clams, crabs and oysters.

A few chefs and restaurateurs are, slowly but surely, changing this perception.

One of them is Sandra Birkhead, who runs the Mariners Coffee Shop in Drummore. If the name suggests a standard, ­panini-and-latte sort of place – think again.

As one blunt ­TripAdvisor reviewer puts it: “If you want the usual stereotype cafe then go elsewhere”.
